Zoey lost her FIRST TOOTH!


A few days before her last day of kindergarten Zoey lost her very FIRST tooth!

It was a bit of a fight at first. Ha! But, she tugged and tugged on her tiny little tooth and it came out! 


We didn't put it under her pillow for the tooth fairy though. She didn't want to put it under there because it's her favorite tooth"

She did SO good! We're SO very proud of her :) 


Spicy Grilled Chicken & Brown Rice Hummus Wraps




 This recipe is a favorite of mine! I see it as a healthy version of chicken tacos.

It's so delicious, filling, quick, and healthy!


Here's where you start

Ingredients:
1-2 Boneless Chicken breasts (you can buy these by the bag)
2- 3 100% Whole Wheat Tortillas
Roasted Red Pepper flavored hummus
Brown rice
Hot Sauce

- you can add cut bell peppers, lettuce, tomatoes, etc.

Preparation:

Heat tortillas in microwave
Prep chicken accordingly (heat in oven, whatever the directions say on what you've bought)
Prep Brown rice accordingly (again depending what you've bought)
Spread hummus on tortillas
cut up your chicken breast and add to your tortillas
top with brown rice and hot sauce to taste!

Clean Turkey Meatball Recipe



This recipe is SO delicious. It makes a good 3-4 days worth of meatballs to use in different dishes! I use them in Meatball Wraps(wrap meatballs with parmesan and marinara in a whole wheat tortilla), Subs( in sub sandwich bread), or with whole wheat pasta and pasta sauce.



It's kid-tested and husband-approved! Here's my recipe!


Yields ABOUT 20 meatballs (dependent on size you roll them to)
Ingredients:
1 lb. raw 93% lean ground turkey
½ tsp. sea salt (or Himalayan salt), divided use
½ tsp. ground black pepper
1 large egg, lightly beaten
½ cup whole grain/ Italian style breadcrumbs
2 cloves garlic, finely chopped
2 Tbsp. grated Parmesan cheese
2 tsp. olive oil
Foil
Cooking spray

Preparation:
Preheat Oven to 350 degrees 

1. Combine turkey, ¼ tsp. salt, pepper, egg, breadcrumbs, garlic, and cheese in a large bowl; mix well with clean hands. 
2. Line a baking sheet with foil, spray with cooking spray
3. Roll mixture into eighteen 1½-inch meatballs. Set on baking sheet.
4. Put in oven for 20 minutes (flipping the meatballs at 10 minutes) 
5. Remove meatballs from oven and add to your tortilla(for wraps), pasta, or sub sandwich bread OR refrigerate (keeps about 3-4 days) for future use.

It's clean, quick, and FILLING!

I'm Courtney! I'm glad you're here! I am a 26 year old wife & mother to 2 beautiful girls, Zoey is age 7 and Haley is 2.  I began my fitness journey a short time ago.  On August 12th, 2015 I started an at home fitness program that changed my life.  After I had my second daughter, Haley, I was frustrated & horrified about the way my body looked & felt.  I was looking for a way to lose unwanted weight from pregnancy but I didn't want to leave my babies to go to the gym.   




I followed a girl on facebook for 3 years before finally taking a leap of faith and joining her next fitness challenge group online!  I figured, what the heck I'll give it a shot.  I signed up for the military coach discount.  The pictures alone made me want to puke, so that was definitely my motivation to get in gear!  I decided from that moment on that I was going to give it everything that I had and make a change.  I was 168 lbs and that was the heaviest I had ever been.  EVER!   After about 2 weeks I was hooked.  I could see that my body was changing and I was able to do more!

After 30 days I couldn't believe how much better I felt.  But, I wasn't losing the weight fast enough so I began doing research and found that eating as clean as possible would help.   I loved eating clean and I was starting to have amazing energy every day.  I was drinking Shakeology and didn't have that afternoon tiredness  like I used too.  Shakeology also helped me jump start my weight loss and shed the rest of the pounds.  I don't know what I would do without my shake for lunch everyday! Now, I eat 6 small meals a day with Shakeology being one of them.  I feel the best that I have ever felt in my life.  I have finished Piyo, Turbofire, 21 Day Fix, and 22 minute Hard Corps. I am down to 25  lbs and I feel AMAZING!  It's a great feeling to look in the mirror and love the person that you are!  I became a Beachbody coach because I love the products & I have had such amazing results that I wanted to share my successes with others and help them to with their health and fitness goals t0o.   I have been able to help so many people change their lives and get healthy!  I have learned so much over the last year and I want to share it with others!  I truly have found my passion!
